Dr. Medici Pork Tenderloin
1. Pork Tenderloin - butterfly carefully not to completely through the loin.
2. Layer the following covering the entire loin: Roasted red peppers, Fresh Ricotta Cheese, Baby spinach.
3. Place the following in rows: Artichoke bruchetta, Sliced artichoke, Red and Yellow peppers.
4. Cover with mozzarella cheese.
5. Tie and give a good sprinkle of roasted Hungarian paprika (for color)
6. Smoke with apple wood at 350 degrees until internal temp. reaches 140. Careful not to over cook. Remove pork from egg, cover and let rest for 20 minutes. Slice and serve.
Miss Alyce's Baked Apples
1 can 6 lb. 8 oz. - White House sliced apples
1 stick - real butter
2 tbs - ground cinnamon
1 tbs - whole cloves
1 tbs - nutmeg
2 1/4 cups - packed brown sugar
3/4 cups - dark raisins
3/4 cup - golden raisins
2 cups - ocean spray Craisins (cranberries)
2 cups - walnuts or pecans
1/2 cup - dark rum or apple brandy
Cook / Smoke in 7 qt. dutch oven. 1.5 hours - add nuts last 15 minutes of the cook. Add rum, light and serve.

Jalapeno Poppers
1 tbs. - Olive Oil
1 - medium onion, finely chopped
1 lb - Fresh Chorizo sausage, casings removed
2 cups - pico de gallo
18 - Large Jalepenos
4 oz - Monterey Jack Cheese
Sautee Onions - add Chorizo and cook - Drain and Cool
Cut 1/2 inch off top of Jalepenos - hollow our center and remove all seeds
Transfer all ingredients to small bowl and mix well. Stuff Jalapenos - press down in center to completely fill
Cook / Smoke 20 - 30 minutes using indirect heat at 325 degrees
